Now for the seasoning, you will require one tablespoon oil and whole garam masala (comprising of 3 cloves, 1 cardamom, and 1 inch piece of cinnamon).
To make the Veg Biryani, first step is to do all the preparations. Start by cutting up the carrots, beans, and potatoes lengthwise. Then, chop the tomatoes into small squares. Next, thoroughly wash the cauliflowers and cut it into its florets. Then, put them in pan of boiling water with a little salt for five minutes only. Drain the water and keep it aside. Next, if you do not already have a ginger garlic paste in your fridge, then grind together about 5-6 cloves of garlic with one inch piece of ginger.
Now when all the preparations had been done, let’s move on to the method of Veg Biryani recipe. First step is to take a big pot and heat the oil. Add the whole garam masala. Give it a few seconds for the flavors of the garam masala to be absorbed in the oil. Then, add onions and sauté them until they turn transparent. Next, add ginger garlic paste and again sauté it for a few more minutes.
Now, add green chilies with all the vegetables that you have cut already, together with chopped tomatoes, chili powder, turmeric powder, coriander powder, biryani masala, salt, mint and coriander leaves, and sauté for some more time. Then, add two cups of boiling water with the lemon juice. At this point, you can check the salt by tasting the water.
Next step is to transfer all the contents into a rice cooker and switch it on the cooking mode. You can switch the rice cooker off as soon as it comes to the warm mode. It is a better idea to transfer the rice to another vessel in order to prevent the bottom from getting burnt. Once it’s done, gently mix the rice and garnish it with fried onions. Serve the Vegetable Biryani hot with raitha or papads.
